Husband-wife duo Thien Le and Tien Phung run Union Road's only Vietnamese restaurant. In fact, Saigon Soul is the only Vietnamese restaurant in Ascot Vale itself. Both Le and Phung hail from the south of Vietnam, bringing a strong collection of dishes not only inspired by their hometowns, but the entirety of Vietnam to Melbourne's west. Saigon Soul is not the typical Vietnamese restaurant. Sure, traditional dishes such as pho and freshly made rice paper rolls are available, but Le prides the restaurant on its repertoire of fusion dishes. The one that instantly caught our attention? The Pho Curry Laksa. Phung's mother Xuan, who has been a chef for about 30 years, also lives in Melbourne. She plays an integral part in the menu generation and actual cooking at Saigon Soul, leveraging off recipes gifted by her ancestors.
